Watermelon Wonder

You can still pick up deliciously sweet and juicy watermelon in the shops; high in Vitamin C and incredibly hydrating, watermelon is the fruit that keeps on giving. We’ve put together 3 easy recipes to help you make the most of this Summer staple.

Frosty Watermelon Frappé

You’ll need a bit of prep (slice the watermelon into small chunks and freeze before making) and a blender for this one, but we guarantee it’s worth it; you’re just 5 minutes away from enjoying a frosty summer treat, perfect for those humid evenings!

Ingredients:
½ cup coconut water
½ banana
2 cups frozen watermelon, chopped
2 tbsp fresh squeezed lime juice
1 tsp maple syrup to sweeten
Fresh mint leaves

Directions:
Step 1. Pour all ingredients into your blender and blitz until you reach the desired consistency (approximately 1 minute).
Step 2. Pour into tumblers and garnish with a sprig of mint.

Watermelon Salad with Feta and Mint

The perfect accompaniment to chicken or grilled fish, this fresh watermelon salad adds a touch of sweetness to savoury dishes.

Ingredients:
4 cups of fresh cubed watermelon
1 cup of feta (Danish, Greek or Australian)
2 cucumbers, diced
A few sprigs of mint
2.5 tbsp Olive oil
½ lime
Sea salt and cracked black pepper

Directions:
Step 1. Combine watermelon, feta and cucumber in a large salad bowl.
Step 2. Drizzle olive oil, sprinkle the salt & pepper and add the freshly squeezed lime juice.
Step 3. Sprinkle with chopped mint and toss the ingredients together.
Step 4. Serve immediately or cover and refrigerate prior to serving.

No Churn Watermelon Sorbet

Watermelon sorbet is the perfect way to finish a meal; light, crisp and refreshing.

Ingredients:
6 cups frozen watermelon chunks
1 can of sweetened condensed milk
Juice of 1 lime

Directions:
Step 1. Combine all the ingredients in a blender, and blend until smooth
Step 2. Remember to scrape down the sides occasionally to ensure the same consistency.
Step 3. Pour the mixture into a Tupperware container and freeze until solid.
Garnish with your choice of other seasonal fruits or a few mint leaves.
